On the strength of this expertise and a strongly expanding rosé market, Cellier des Dauphins today presents its latest superb offering: Val Soléu, the naturally aromatic rosé.

The Val Soléu vineyards are situated in the heart of the Drôme provençale near the village of Nyons where the river Eygues, after having traversed the pre-alpine slopes of the Baronnies, meanders across this valley blessed with 315 days of sunshine per year. Here, conditions are perfect for the natural expression of aromas… terroirs at altitude, the cleansing Mistral and Lou Pontias winds which keep the vines healthy, and the refreshing rivers of the Eygues and Ouvèze which descend from the mountains. This terroir concentrates the finest aromatic diversity in the region, filled with vines, lavender, fruit trees, olive trees, aromatic herbs and truffle oaks.

The expertise of Cellier des Dauphins then comes fully into play in the selection of parcels at altitude and the particularly aromatic Grenache and Cinsault grapes. These are harvested at night or in the early hours of the morning, the optimum time for the concentration of fruit aromas known as the “thiol hour”, when thiols, the compounds responsible for grapefruit and exotic fruit aromas, attain peak concentrations. They are then quickly pressed at low temperatures and matured on fine lees to preserve all their natural flavour.
