About 10 days ago, veraison has begun on Cellier des Dauphins vineyards. We observed the beginning of veraison on July 6, and we have now reached 70% veraison on some grapes. The veraison of our Grenaches is slower, but the Syrahs are very early this year.
But what is veraison?
This is when the berries grow and turn into the color they will have at optimum ripeness. The berries, which were hard, soften thanks to the increase of sugars and the decrease in acidity.
This is the last step before harvest! Our vinegrowers are therefore very attentive to the grapes maturity, in order to predict the optimal date for harvesting.
