WINE GROWERS LET THEIR SOIL TALK

During the last two decades, consequent progress has been made concerning the vinification thanks to the use of significant technological means in the mastering of the fermentation temperatures, the selection of grape varieties and constant care of the vinification process in laboratory.


Brought all together, those new means enabled to keep an acceptable quantity of quality wines, marketed by Cellier des Dauphins.


Nowadays, the standards of the International wine market are focused on qualitative research. As the oenologic ressources are mainly used for the vinification, quality improvement is reached by the identification of the vineyards and the improvement of the growing techniques.


The initiative was made real with the launch of new "Top of range" cuvées in order to improve the Cellier des Dauphins brand, as for instance the Cuvées Privée raised in new barrels and aged for two years in the Cathedral Cellars of St Restitut.
